Fluffy Pancake Fritters with Sweet Kefir
A quick, inexpensive, filling, and tasty breakfast for a child! Fluffy fritters with kefir can be made in up to half an hour, filling any morning with the aroma of home baking. No yeast needed, and you’ll only need half a glass of kefir. Serve with anything: berries, cream, dulce de leche, spread, or sour cream.

Preparation
Step 1
To make fluffy fritters with kefir, prepare all ingredients. Bring the kefir to room temperature - this helps the batter rise better. Sift the flour through a sieve to aerate it.

For the batter, use a convenient deep bowl. Combine the kefir and the egg. Whisk until smooth.
Step 3
Add a little vegetable oil and sugar. You can increase the sugar slightly, but remember kefir is sweet on its own.

Add baking powder. For aroma, you can add a pinch of vanillin. Gradually add flour and mix the batter. You may need a bit more or less flour - judge by consistency rather than exact amount. The batter should be fairly thick and smooth, with no flour lumps. Cover with a towel and let stand for about 10 minutes.
Step 5
For frying, use any nonstick skillet. Heat it well and add a little vegetable oil. Spoon small portions of batter onto the skillet. Cook over low heat for 1-2 minutes per side.
Step 6
Even without yeast, the fritters turn out fluffy. Cooking over low heat helps them rise well. They should become an appetizing golden color. Remove from the skillet and serve right away.
Step 7
We love these fritters with dulce de leche (caramelized sweetened condensed milk), but you can also serve them with sour cream, jam, or preserves. Enjoy!
