Step 1
Use premium-grade flour. Kefir should be at room temperature, so take it out of the fridge in advance. Salt dissolves poorly in cold kefir. Use kefir with 2.5-3.2% fat. For frying, use refined, odorless vegetable oil.

Peel boiled sausage from factory casing and cut into small cubes. Instead of boiled sausage, you can use smoked sausage or any other cooked-smoked meat: ham, pork loin, neck, ham cut, balyk sausage, etc.

Grate the cheese on a coarse or medium grater. Any cheese will work for this dish, as long as it is tasty, good quality, contains no vegetable fats, and melts well.

Sift the flour into a bowl. Pour in room temperature kefir, add an egg, baking powder, and salt.

Mix the batter thoroughly with a whisk, breaking up all lumps. The batter should be thick but pourable. If it’s too liquid, add a bit more flour. If too thick, thin it with kefir.

Add the diced sausage and grated cheese to the batter. Mix again.
Step 7
Heat some vegetable oil in a frying pan over medium heat. Spoon the batter into the pan, shaping small round pancakes. Fry on both sides until golden brown.
Step 8
Transfer the ready pancakes to a plate and serve immediately. Enjoy!
