Step 1
How do you knead fluffy kefir dough for hand pies without yeast? Prepare the necessary ingredients. Take the kefir out of the refrigerator in advance so it reaches room temperature. Adjust the amount of sugar ahead of time depending on what you plan to make with the dough, such as pizza, pie, or savory buns. If the bake will be sweet, keep the amount of sugar the same; otherwise, it is better to reduce it.

Pour the kefir into a suitably sized bowl. Add the sugar, salt, and baking soda. Whisk everything thoroughly so the dry ingredients dissolve and the kefir begins to foam. The baking soda should be added to the kefir, not later with the flour, because kefir activates it well.

Next, add the vegetable oil and mix again with a whisk.

Add half of the flour, sifted through a sieve, to the bowl and mix thoroughly with a wooden spoon. The dough should turn out soft and airy, so add the flour gradually. Continue adding flour until the dough reaches the right consistency. You may need slightly more or slightly less flour.
Step 5
When the dough comes together into a ball, transfer it to a floured work surface and knead it by hand. The dough should feel similar to yeast dough and be just slightly sticky. The quick kefir dough without yeast is ready, and you can start working with it right away, but I recommend letting it rest for 10–15 minutes, covered with a towel.
