- teaspoon - 5 ml
- dessert spoon - 10 ml
- tablespoon - 20 ml
- glass - 200 ml
Preparation
Step 1
Prepare the ingredients. All ingredients for the batter should be at room temperature. Use kefir with at least 2.5% fat and any neutral vegetable oil, such as sunflower oil.
Step 2
Finely chop the walnuts.
Step 3
Rinse the raisins and remove any stems. If they are very dry, cover with boiling water and leave for 10 minutes, then drain and pat dry.
Step 4
Beat the eggs with the sugar until light and fluffy.
Step 5
While continuing to beat, pour in the room-temperature kefir and vegetable oil.
Step 6
Add the flour sifted together with the baking powder and mix until smooth. Add the flour gradually, as you may need slightly more or less. The batter should be thick but still pourable.
Step 7
Fold the raisins and chopped walnuts into the batter.
Step 8
Pour the batter into a greased loaf or cake pan. The original recipe uses a 8½ × 4-inch loaf pan; a 8–9-inch round pan will also work.
Step 9
Prepare the ingredients for the chocolate streusel.
Step 10
Place the cold diced butter, flour, sugar and cocoa powder in a blender and pulse until fine crumbs form. Alternatively, rub the ingredients together with your fingertips.
Step 11
Sprinkle the chocolate streusel evenly over the batter. Bake in an oven preheated to 355°F for 45–50 minutes. Check doneness with a wooden skewer; it should come out dry. Remove the cake from the oven and let it cool in the pan.
Step 12
Transfer the cooled cake to a serving plate, cut into slices and serve.
