Preparation
Step 1
Prepare the ingredients. Use all-purpose flour and bring the milk to room temperature beforehand. Any neutral vegetable oil, such as sunflower oil, will work.
Step 2
Sift the flour, starch and baking powder into a deep bowl.
Step 3
Add the salt and sugar and mix thoroughly with a whisk. Adjust the amount of sugar to taste, or replace some of it with vanilla sugar.
Step 4
Gradually pour in the room-temperature milk, whisking after each addition until smooth. You can also use a mixer to remove any lumps more quickly.
Step 5
The batter should be quite thick and fall from a spoon or whisk in heavy dollops. If it is too runny, add a little more flour.
Step 6
Pour in the vegetable oil and mix thoroughly until it is completely incorporated into the batter.
Step 7
Heat a dry frying pan over medium-high heat. Since the batter already contains oil, there is usually no need to grease the pan. Spoon in small portions of batter and cook for about 1 minute on each side, until golden and cooked through.
Step 8
Transfer the pancakes to a plate and serve immediately while hot, with honey, jam or your favorite sweet sauce.
