Fluffy Cottage Cheese Casserole with Raisins

Preparation
Step 1
Prepare the ingredients. Preheat the oven to 350°F. Choose soft cottage cheese with a moderate moisture level – it should be neither too dry nor too wet. Any fat percentage will work, although 5–9% is ideal. Use medium-thick sour cream.
Step 2
Add the semolina to the sour cream, mix and leave for 15 minutes so the semolina can swell.
Step 3
Rinse the raisins and cover them with boiling water for 10 minutes. Drain, then pat them dry with paper towels.
Step 4
Beat the eggs with a pinch of salt, vanilla sugar and regular sugar until pale and fluffy.
Step 5
Press the cottage cheese through a sieve or mash it thoroughly. You can also blend it with an immersion blender. This will give the finished casserole a smoother and more delicate texture.
Step 6
Add the sour cream and semolina mixture and the baking powder to the cottage cheese. Mix thoroughly or beat with an electric mixer until evenly combined.
Step 7
Add the cottage cheese mixture to the beaten eggs in 3 batches, beating thoroughly after each addition until smooth.
Step 8
Add the raisins and mix gently.
Step 9
Grease a baking dish with butter and sprinkle it with semolina. Transfer the cottage cheese mixture to the prepared dish. An 8-inch dish works well. If using a wider dish, the finished casserole will be lower.
Step 10
Bake in the preheated oven for approximately 40–45 minutes. The casserole is ready when a light golden crust forms on top and a skewer inserted into several places comes out dry. Serve with sour cream, sweetened condensed milk or your favorite sauce.
