Flourless Coconut Cookies

Preparation
Step 1
Beat the egg whites until frothy. Mix the sugar or sweetener - I used 7 crushed "Milford" tablets, but you can use less - with the shredded coconut. Add vanillin if desired; it is optional and depends on your taste. Gradually fold the mixture into the egg whites while stirring.
Step 2
Line a baking sheet with parchment paper or a silicone mat and use two tablespoons to shape the coconut mixture into small pyramids.
Step 3
Place in an oven preheated to 160°C for 15–20 minutes. After 10 minutes, start checking whether the cookies are done to avoid overbaking them.
