Preparation
Step 1
First, rinse the plums under running water and remove any leaves and stems. Using a sharp knife, separate the pits from the flesh by cutting each plum into two halves. By the way, the pits come away especially easily from ripe and even overripe fruit, but in that case you are more likely to get a jam closer to a fruit spread than a chunkier preserve. After that, cover the plums with sugar and leave them for several hours, or better yet overnight. During this time, they will release juice and become firmer.
Step 2
Place the bowl with the fruit mixture over high heat and, once it comes to a boil, cook for 5 minutes over medium heat. Remove the plums from the heat and let them cool slightly. Then place the mixture back over the heat, but do not cook it again for long - it is enough just to bring it back to a boil. While still hot, pour the finished jam into sterilized jars and seal them with lids. It is best stored in the refrigerator or a cellar, where it will not be exposed to light and heat.
