Fish Patties with Semolina in a Frying Pan

Step 1
How to make simple and quick pollock mince patties with vegetable sauté and breadcrumbs in a frying pan? First, prepare all needed ingredients and spices.
Step 2
For the vegetable sauté, heat a frying pan with about 2 tablespoons of oil. Add one onion sliced into quarter-rings and one medium carrot grated on a fine grater.
Step 3
Mix the vegetables and fry them over high heat.
Step 4
Place three pieces of white bread into a bowl, pour in 100 ml of room-temperature milk, and let the bread soak.
Step 5
Add one pressed garlic clove to the onion and carrot, mix, fry for one more minute, then turn off the heat and let the sauté cool.
Step 6
Run 1 kg pollock fillet, the vegetable sauté, and the milk-soaked bread through a meat grinder with a coarse plate. Transfer everything into a large bowl and salt to taste.

Add 50 g semolina and a mix of ground black and red pepper.

Mix thoroughly until the mince becomes smooth and even.

Let the mince rest for 20 minutes, mixing it twice during this time.

Take some mince and shape it into a small flat patty. Place a small piece of butter inside.

Shape the mince around the butter and form a cutlet, tapping it in your hands so it keeps its shape during frying.

Coat each cutlet in breadcrumbs mixed with wheat flour, then place them on a plate.

Heat a frying pan with 3 tablespoons of vegetable oil. Lay in the cutlets and fry on one side until golden over medium heat.

Flip the cutlets, cover the pan with a lid, and cook over low heat for about 10 minutes until fully done.
