Falafel with salad
Easy homemade falafel made from mashed chickpeas, spring onions, and warm spices, pan-fried until crisp and golden. Served with a fresh lemon-dressed salad for a light, delicious meal.

Ingredients
For the falafel

- tablespoon - 20 ml
- glass - 200 ml
Preparation
Step 1
Put the chickpeas in a saucepan and mash them with a potato masher until as smooth as possible.
Step 2
Add the spring onions, cumin, lemon zest, flour, and salt. Season generously with black pepper and mix everything together well using a wooden spoon.
Step 3
With your hands, shape the mixture into eight equal balls, then flatten each one slightly to form patties.
Step 4
Heat 2 teaspoons of oil in a frying pan over low heat. Add the falafel and cook for 4 minutes. Flip them over, add another 2 teaspoons of oil, and cook for a further 3-4 minutes, or until golden brown and crisp on both sides.
Step 5
Meanwhile, place the cucumber, tomato, and lettuce in a large bowl. Squeeze the juice from half a lemon into a small bowl, add a pinch of salt and pepper, and whisk with the olive oil to make a simple dressing. Pour the dressing over the salad and mix well.
Step 6
Serve the freshly cooked falafel alongside the salad.
