Eggless Deep Fried Buns
Golden spiced fritters deep-fried until crisp outside and soft inside, lightly flavoured with nutmeg and cayenne for a warm, comforting treat.

Step 1
In a large bowl, mix together the flour, baking powder, sugar, cayenne pepper, nutmeg and salt until evenly combined.
Step 2
Pour in the milk and stir to form a soft, wet dough.
Step 3
Pour enough oil into a deep, wide pan for frying and heat over a medium–high heat. Keep the oil temperature between 335-345°F (170-175°C). If the oil is too hot, the fritters will brown too quickly on the outside while remaining uncooked inside. If it is too cool, they will absorb excess oil and become soggy.
Step 4
When the oil reaches the correct temperature, scoop small portions of dough with your hand and carefully drop them into the hot oil. Fry, turning occasionally, until golden brown on both sides and cooked through.
Step 5
Remove and drain briefly, then serve hot or warm.
