Egg-Free Zucchini Fritters

Step 1
How do you make egg-free zucchini fritters? Prepare the ingredients. Wash the zucchini thoroughly with a brush. If the zucchini is young, with tender skin and small seeds, there is no need to peel it. If the zucchini is large and overripe, with tough skin and large seeds, it should be peeled and the seeds removed. I had a young zucchini, but I still trimmed off some darkened parts of the skin.
Step 2
Grate the zucchini on a medium grater. You can also use a coarse grater, but for a more delicate fritter texture, a medium grater is better. Do not drain the released juice. Since this version does not use eggs, the juice will help the flour bind with the zucchini and form a smooth, semi-thick mixture.
Step 3
Add salt and pepper and mix. Again, if the zucchini releases more juice, do not pour it off.
Step 4
Add the sifted flour. I sift it directly into the bowl with the zucchini, then mix. You should get a fairly thick, smooth, semi-thick mixture.
Step 5
If the mixture turns out too dry and the zucchini juice is not enough to moisten all the flour, you can add 1–2 tablespoons of water. If you like, you can also add chopped dill, parsley, or cilantro. For a sharper flavor, you can add 1 peeled garlic clove pressed through a garlic press.
Step 6
Heat a little vegetable oil in a skillet. Spoon in the zucchini mixture and form small round fritters. Fry the zucchini fritters over medium heat for about 3–5 minutes on each side, until golden brown.
Step 7
Transfer the finished fritters to a plate, sprinkle with chopped herbs if desired, and serve. Enjoy your meal!
