Easy Zucchini Spread for Winter in a Multicooker
A favorite bright appetizer for any table! Zucchini spread in a multicooker turns out not only very tasty and wholesome. It’s quick and easy: no stirring needed, it never burns or boils over!

Step 1
How do you make zucchini spread for winter in a multicooker? Prepare all the ingredients. Any zucchini works: light-skinned, yellow, or green zucchini. It’s best if they’re young, with thin skin and small seeds.

Peel the onion and dice it.
Step 3
Peel the carrot and grate it.
Step 4
Put the onion and carrot into the multicooker bowl, turn on Fry mode, add vegetable oil, and cook for 15 minutes. Remember all multicookers differ, so the time and mode may vary - use your appliance as a guide.
Step 5
Add garlic. I pressed the cloves through a press, but you can chop them any way - you’ll be blending everything later anyway.
Step 6
Fry everything together for about 5 more minutes.
Step 7
If needed, peel the zucchini and remove large seeds, then cut into cubes.
Step 8
Add the zucchini to the multicooker bowl and cook everything together for 1 hour on Stew mode.
Step 9
Blend the vegetables until smooth. If needed, you can run them through a meat grinder instead.

Add sugar.

Then add pepper.

Salt the spread.

Pour in vinegar. Cook for 30 minutes more on Stew mode.
Step 14
Sterilize the jars in any convenient way. I microwave jars with a little water for 5-7 minutes. You can also sterilize them in the oven at 100°C / 212°F for about 30 minutes, or hold over steam. Boil the lids for 5 minutes.
Step 15
Spoon the spread into jars and seal tightly with lids. No further sterilization is required; store in a cool place.
