- dessert spoon - 10 ml
- tablespoon - 20 ml
- glass - 200 ml
Preparation
Step 1
Prepare the ingredients. Take the sour cream out of the refrigerator in advance so it reaches room temperature. Start with the batter. Use all-purpose flour and large eggs; if your eggs are small, use 5. Adjust the amount of sugar to taste.
Step 2
Crack the eggs into a bowl, add the sugar and beat until very light and fluffy. The mixture should increase in volume about 3–4 times.
Step 3
Add the room-temperature sour cream and beat again until combined.
Step 4
Sift the flour and mix it with the baking powder. Add the flour mixture gradually to the eggs, as you may need slightly more or less depending on the flour. Add the salt and beat until smooth.
Step 5
Check the consistency of the batter. It should be thick but still pourable.
Step 6
Prepare the filling ingredients. Use cottage cheese that is soft rather than dry or very lumpy. Vanilla sugar can be replaced with a small pinch of vanilla powder.
Step 7
Finely chop the candied fruit. You can use a mixture or just one type, omit it entirely or replace it with raisins.
Step 8
Place the cottage cheese, egg, sugar and vanilla sugar in a bowl. Beat with an electric mixer until smooth. If the cottage cheese is dry or grainy, blend it in a food processor or press it through a sieve first.
Step 9
Fold the candied fruit into the cottage cheese mixture. The filling should be thicker than the batter and should not be runny. Line a 9–9½-inch baking pan with parchment paper and lightly grease it.
Step 10
Pour the batter into the prepared pan and smooth the surface. Carefully spoon the cottage cheese filling into the center. Bake in an oven preheated to 355°F for about 55–60 minutes. The edges should rise and turn golden, and a skewer inserted into the baked batter should come out clean.
