Easy Carrot Muffins in Silicone Molds
Very tasty, made from affordable ingredients, fluffy and soft! Easy carrot muffins in silicone molds are simple to bake. The carrot isn’t noticeable, but it adds moisture, tenderness, and a bright color.

Preparation
Step 1
How to make easy carrot muffins? Prepare the necessary ingredients. Sift the flour through a sieve to aerate it.
Step 2
Peel the carrots and rinse under running water. Grate the carrots on a fine or medium grater. Zest the orange - use only the orange part of the peel, avoiding the white pith (it’s bitter). Add a little ground cinnamon to the zest and carrots.
Step 3
In a mixing bowl, combine the eggs and sugar and beat until light and fluffy. Then mix in the vegetable oil.
Step 4
Next, mix in the sifted flour with baking soda. You may need a bit more or less flour - judge by the batter consistency.
Step 5
Stir in the grated carrots with the orange zest and cinnamon. At this stage, you can optionally add other mix-ins, such as nuts or candied fruit.
Step 6
The batter will be fairly thick, but it should still drip from the whisk. Lightly grease the silicone molds with vegetable oil and fill them about 2/3 full. Bake in a preheated oven at 180°C / 356°F for about 20-25 minutes (timing is approximate; adjust to your oven).
Step 7
The muffins will rise a little and brown on top. Check doneness with a wooden skewer - if it comes out dry, the muffins are done.
Step 8
Thanks to the carrots, the muffins turn a beautiful orange color with a porous, slightly moist crumb. Dust with powdered sugar or decorate with a swirl of cream if you like. Enjoy!
