Dumplings from Raw Grated Potatoes
For true potato lovers! To appreciate dumplings made from raw grated potatoes, you need to give them a try. They’re best enjoyed thoughtfully with a salty pickle and fried onions. If you don’t cook them, you’ll never know whether you’re for them or against them.

Preparation
Step 1
How to make the dumplings? Prepare all the needed ingredients. For the first time, I recommend making a small batch from one large potato - the dish is quite specific. You won’t need a whole egg, only 1 tablespoon of beaten egg mixture (yolk + white, whisked together). If you want to use a whole egg, you’ll need to increase the amount of potato significantly; otherwise the mixture will be too runny.
Step 2
Peel the onion and cut it in half. Set one half aside for serving. Grate the other half on a fine grater.
Step 3
Wash and peel the potato. Grate it finely. Immediately mix it with the onion so the potato doesn’t darken.
Step 4
Transfer the grated potato to a colander lined with several layers of cheesecloth. Squeeze out as much potato juice as you can. You won’t need the juice - it’s unnecessary in this dish.
Step 5
Add starch, nutmeg, and 1 tbsp of the beaten egg mixture. Mix it. Try forming a ball slightly smaller than a walnut in its shell. If you need a thicker mixture, add a little wheat flour of any kind. But don’t overdo it, so the dumplings don’t become too dense. It’s better if they’re not perfectly smooth but stay fluffy inside. I got only 8 small dumplings.
Step 6
Pour water into a pot and bring to a boil. Fill the pot about halfway so the dumplings will be fully covered. Once the water boils, add salt. If you like, add a small bay leaf for flavor. Drop the dumplings into the pot and use a spatula to check they haven’t stuck to the bottom. Cook until done for 30-40 minutes, stirring occasionally. They should increase in size.
Step 7
Five minutes before serving, fry the finely chopped second half of the onion in oil. Serve the dumplings hot, topped with fried onions.
