Doughnuts with jam
Classic homemade jam-filled doughnuts - soft, golden, and sugar-coated with a sweet jam centre, fried to perfection.

Preparation
Step 1
To prepare the dough, place all ingredients into a large mixing bowl, reserving a quarter of the water. Mix with your hands until a rough dough forms. Gradually pour in the remaining water and continue kneading in the bowl for about four minutes. You may also use a stand mixer fitted with a dough hook for this stage.
Step 2
Transfer the dough onto a lightly floured surface and knead thoroughly for 10 minutes until smooth and elastic. Place it into a clean bowl, cover with a damp tea towel, and allow it to rise for an hour.
Step 3
Turn the dough out onto a lightly floured surface and briefly knead to knock it back. Divide into 10 equal pieces and roll each into a ball. Arrange the dough balls on a floured baking tray and leave to rise again for another hour.
Step 4
Heat sunflower oil in a deep fat fryer to 180C/350F. Carefully lower each dough ball into the oil and fry for approximately five minutes on each side, or until golden brown. Lift the doughnuts out using a slotted spoon and immediately roll them in caster sugar so the heat helps it adhere. Set aside to cool completely.
Step 5
Once cooled, cut a small slit in the side of each doughnut, reaching toward the centre. Fill a piping bag or syringe with smooth or sieved strawberry jam and generously pipe the filling inside before serving.
