Dough with Fresh Yeast
Airy and soft. For pastries with any filling. Dough with fresh yeast turns out tender and pleasant to work with. With it, it is very easy to delight your loved ones with delicious homemade baked goods. Pies from this dough can be baked with either sweet or savory fillings.

Preparation
Step 1
How do you knead yeast dough with fresh yeast and milk? Prepare the necessary ingredients. Fresh yeast is usually sold in 100 g (about 3.5 oz) blocks. Cut off the amount of yeast you need and break it into small pieces. Sift the all-purpose or bread flour a couple of times through a sieve to enrich it with oxygen. Thanks to this, the finished baked goods from this dough will be very airy. The milk should be warmed until just warm.
Step 2
Make the starter. To do this, pour a little warm milk into a small bowl and add the yeast. Then add the sugar. Note that the milk should be warm, but not hot. In hot milk the yeast will die, and in cold milk it will not activate.
Step 3
Add a couple of tablespoons of flour from the total amount.
Step 4
Mix everything and leave it to stand for 10-15 minutes. In the starter, the yeast will dissolve well and the fermentation process will begin. You will see this from the bubbles that appear.
Step 5
Melt the butter in the microwave or over a double boiler.
Step 6
Pour the finished starter into the bowl in which you will knead the dough. Add the remaining warm milk, the eggs, and the cooled melted butter.
Step 7
Begin kneading the dough and gradually add the flour. You can knead it with a spoon, by hand, or with a mixer using a dough hook attachment.
Step 8
Gradually, the dough will become thicker.
Step 9
Knead the dough until it almost stops sticking to your hands. The amount of flour in the recipe is approximate. You may need a little more or a little less. Judge by the consistency of the finished dough. Put the dough in a warm place and cover it with a towel. Leave it to rise for 1 to 1 1/2 hours.
Step 10
The dough is very soft and airy, so it rises quite quickly. But it does not tolerate drafts. So when working with yeast dough, all the windows in the kitchen should be closed.
