Dorado with Vegetables in Sour Cream

Preparation
Step 1
If your fish is frozen, remove it from the freezer ahead of time and thaw it at room temperature. Clean the fish by removing the scales and innards.
Step 2
To fit the dorado in the skillet, cut off the heads and tails (optional). If you prefer to cook it whole, make sure to remove the gills. Rinse the fish in cold water and pat dry with paper towels.
Step 3
Prepare the vegetables. Peel the onion and carrot, rinse, and pat dry. In a small bowl, combine sour cream with your chosen spices - for example, garlic powder, paprika, and Provençal herbs. Add salt to taste and mix well.
Step 4
Slice the onion into thin half rings and cut the carrot into thin sticks. You can also use a coarse grater or a julienne slicer.
Step 5
Pour some odorless vegetable oil into a skillet. Once the oil is hot, fry the dorado until cooked through, lightly salting if desired (note that sour cream already contains some salt).
Step 6
In the same oil where the fish was fried, add the carrots and onions. Stir and cook until the carrots soften and the onions turn golden.
Step 7
Place the fried fish on top of the sautéed vegetables.
Step 8
Evenly spread the sour cream mixture over the dorado.
Step 9
Cover the skillet with a lid and simmer over low heat for 1-5 minutes, depending on the heat intensity. Do not overcook - sour cream can curdle if heated too long.
Step 10
Serve the dorado with the creamy vegetables, garnished with fresh herbs. Enjoy your meal!
