Preparation
Step 1
Instead of chicken fillet, you can use meat from drumsticks. Mushrooms like chanterelles or porcini can be used instead of champignons.

Wash the chicken fillet, pat dry, and boil it in salted water for about 20 minutes until fully cooked. Remove from the broth, cool, and cut into small cubes. Alternatively, you can bake the chicken in foil in the oven or fry it in vegetable oil.
Step 3
Remove the Korean-style carrots from the marinade and drain well. If the strands are too long, cut them shorter. You can also prepare Korean carrots yourself.

Wash, dry, and slice the mushrooms into thin pieces.

Cut the cucumber into thin sticks. If the skin is smooth and not bitter, you don’t need to peel it.

Finely chop the onion.

Heat a frying pan over medium heat. Add the mushrooms and onions and cook, stirring, until the excess moisture evaporates. Then pour in vegetable oil and fry for about 3 minutes, stirring occasionally. Season with salt and pepper to taste at the end.

Place a 5–6 inch (14–16 cm) cooking ring on a plate. Spread the mushroom-onion mixture as the first layer, pressing gently, and drizzle a thin layer of mayonnaise on top. (It’s easier to use a piping bag for even distribution.) Press each layer down firmly so the salad holds its shape after removing the ring.

Add the chicken as the next layer and drizzle with mayonnaise.

Then layer the cucumber sticks and make a light mayonnaise grid pattern on top.

The final layer is Korean-style carrots. Do not add mayonnaise to this layer. Garnish the salad with chopped herbs, fried mushroom slices, and crushed nuts.

Carefully remove the cooking ring before serving. Enjoy your meal!
