Cupcakes with Cream Cheese Frosting and Caramel

Preparation
Step 1
Prepare and weigh the ingredients for the cupcakes.
Step 2
Mix together the chocolate, butter, and vegetable oil. Put the mixture in the microwave for a few seconds. Do this 3 times until the chocolate dissolves. Mix everything and set it aside for now.

Beat the eggs and the egg yolk with the sugar.
Step 4
Now add the cooled chocolate and butter mixture.
Step 5
Mix together all the dry ingredients and add them to our mixture.
Step 6
Now add half of the sour cream and half of the flour, and then the rest in the same way. Mix everything together. At the end, pour in the boiling water.
Step 7
Prepare the paper liners and place them into the muffin pan. Fill them with the batter to 3/4 full. Put them into an oven preheated to 180°C (350°F) for 20 minutes.

Take the baked cupcakes out and let them cool completely.

The cupcakes turn out very tender. Now we need to fill them. You can use any jam, dulce de leche, or, as in my case, caramel.

I made the caramel a long time ago. It keeps well in the freezer. This is caramel with gelatin, and not just caramel, but salted caramel. So, let’s make the caramel. Pour water over the gelatin. Take a heavy-bottomed saucepan. Add only part of the sugar. Turn on the heat, but not too high. When part of the sugar melts, add another portion. Do not stir the sugar. You may only tilt the saucepan. At the same time, place the cream on the heat in a separate pot. Heat it almost to a boil.
Step 11
When the sugar has dissolved and turned lightly brown, pour in the cream. Add it in parts, starting with just a little, and immediately stir well with a whisk. Do not pour in all the cream at once. Be careful, the cream will rise and you may get burned. Stir in the cream and add the room-temperature butter. Mix everything well. Now remove it from the heat, pour it into another container, and add the squeezed gelatin. Mix everything together. Then add a pinch of salt.

Cut a hollow in the cupcakes with a knife and fill them.
Step 13
For the cream cheese frosting, mix the cold cream, cold cream cheese, and powdered sugar. Beat everything well.
Step 14
Take a piping bag and this kind of nozzle. Fill it with the cream and decorate the cupcakes. That is all. Put them into the refrigerator to chill, and then you can enjoy them.
