Cucumber Salad with Sesame Seeds and Soy Sauce
Cucumber salad with soy dressing for every day. This simple salad belongs to the category of super-fast and easy-to-make dishes. Because of the soy sauce, the salad can be considered Asian-style, so you can eat it not only with a fork, but also with special sushi chopsticks.

Preparation
Step 1
How do you make a salad with sesame seeds, cucumber, and soy sauce? Prepare the necessary ingredients for the salad. Choose cucumbers that are firm and crisp. If there are soft spots on the cucumbers, it is better not to buy them. Wilted vegetables should not be used for the salad either. You can use regular white sesame seeds, black sesame seeds, or a mix of both. If you wish, you can also add green onion tops, onion, and/or garlic to the salad.

Wash the cucumbers and cut them into thin slices. Of course, it is more convenient and faster to slice the cucumbers with a special slicer. However, if you do not have one, you can use a regular knife. If the cucumbers have very tough skin, it is better to peel them. The same applies to the seeds: in large overripe cucumbers, the seeds may be tough, so it is better to remove them as well.
Step 3
Prepare the necessary ingredients for the dressing. You can replace the balsamic vinegar with apple cider vinegar or wine vinegar, red or white, it does not matter. If you prefer a more eastern flavor, use rice vinegar.
Step 4
Separately mix the soy sauce, vegetable oil, balsamic vinegar, and sugar. Stir everything and leave the dressing for 5 minutes so that all the sugar dissolves. You can replace the soy sauce with teriyaki sauce. In that case, there is no need to add sugar, because it is already slightly sweet.
Step 5
Pour the dressing over the cucumbers and mix so that all the cucumber slices are coated with the sauce. Put the salad into the refrigerator for 15–20 minutes so it can absorb the flavors. During this time, mix the cucumbers with the sauce once again.
Step 6
Before serving, sprinkle the salad with sesame seeds. Enjoy your meal!
