Crispy Battered Shrimp
An impressive and exceptionally crispy appetizer for seafood lovers! These battered shrimp can be served with beer, white wine or your favorite dipping sauces. They are flavorful, filling and surprisingly quick to prepare.

Preparation
Step 1
Prepare the ingredients. You can replace king shrimp with any other preferred variety. Chill the water in advance so it is ice-cold.
Step 2
Remove the heads and shells from the shrimp, leaving the tails attached so they are easier to dip into the batter. Make a shallow cut along the back and remove the dark vein, then rinse the shrimp again and pat them thoroughly dry. If using frozen shrimp, thaw them beforehand on the bottom shelf of the refrigerator.
Step 3
Sift the flour into a bowl, then add the salt and ground black pepper.
Step 4
Pour in the ice-cold water and add the egg yolk. Whisk until smooth and thick, then leave the batter to rest for 2–3 minutes so it thickens slightly. It should be viscous enough to coat the shrimp without running off like water; add a little more flour if necessary.
Step 5
Hold each shrimp by the tail and dip it into the batter, coating it evenly.
Step 6
Heat enough vegetable oil in a deep frying pan or saucepan over high heat to submerge the shrimp completely. Carefully lower the battered shrimp into the hot oil and fry until crisp and golden.
Step 7
Remove the cooked shrimp with a slotted spoon and transfer them to paper towels to absorb the excess oil.
Step 8
Serve the crispy battered shrimp hot or cold with your preferred dipping sauces.
