Creamy Tomato and Vegetable Sauce
An inexpensive yet wonderfully flavorful addition to everyday meals! This juicy vegetable sauce with tomatoes and sour cream gives simple side dishes such as rice, buckwheat, pasta or mashed potatoes a richer, creamier taste.

Preparation
Step 1
Prepare the ingredients. Adjust the proportions and types of vegetables according to your taste and what you have available. Sour cream of any fat percentage will work, although thicker sour cream will give the finished sauce a creamier texture.
Step 2
Peel the onion and garlic and rinse them in cold water. Finely chop the onion and cut the garlic into thin slices.
Step 3
Heat a frying pan, add a small amount of vegetable oil and cook the onion for approximately 1 minute, until it begins to soften. Add the garlic and cook briefly until fragrant.
Step 4
Rinse the bell pepper, remove the stem, seeds and inner membranes, then cut it into small cubes.
Step 5
Add the bell pepper to the onion and stir. Cover the pan and simmer over low heat for 3–5 minutes, until the pepper begins to soften. The vegetables should release enough juice to prevent sticking, but add 2–3 tablespoons of water if necessary.
Step 6
Rinse the tomatoes, cut them into cubes and add them to the pan. Cook everything together for 1–2 minutes, until the tomatoes begin to release their juices.
Step 7
Season with salt and your preferred spices. Ground black pepper and dried basil work especially well. For vegetables that retain more texture, continue immediately to the next step; for a smoother sauce, cover and simmer for another 12–15 minutes.
Step 8
Pour in the hot water, add the sour cream and finely chopped fresh herbs, then mix well and bring the sauce just to a boil.
Step 9
Serve the creamy tomato and vegetable sauce with spaghetti, mashed potatoes, rice, buckwheat or another preferred side dish.
