Creamy Primavera Green Soup
A vibrant green spring soup made with broccoli, peas and garlic, blended smooth and served.

Preparation
Step 1
Heat 1 tablespoon of the oil in a large saucepan over a medium heat. Add the chopped white parts of the spring onions, broccoli, add green peas (it can be frozen), beans (use broad beans or white ones) and almost all of the garlic, reserving a little for garnish. Pour in the stock and cook for 5-6 minutes, until the vegetables are tender.
Step 2
Stir in the cream (use plant based if needed), then blend the soup until completely smooth using a stick blender or countertop blender.
Step 3
In a separate small saucepan, heat the remaining oil over a medium heat. Add the green parts of the spring onions along with the reserved wild garlic and fry for 2-3 minutes, until softened and fragrant.
Step 4
Ladle the soup into bowls and top with the fried spring onions and wild garlic. Finish with a sprinkle of hazelnuts and a drizzle of olive oil before serving.
