Preparation
Step 1
Prepare the ingredients. Besides button mushrooms, you can use other suitable mushrooms. Choose sour cream with any fat content and a neutral refined vegetable oil for frying.
Step 2
Rinse the mushrooms briefly under running water, gently removing any dirt, then pat them thoroughly dry with paper towels. Avoid soaking them in water.
Step 3
Cut the mushrooms into large pieces. Do not chop them too finely, as they will shrink considerably during cooking.
Step 4
Peel the onion and slice it into thin strips.
Step 5
Grate the cheese on a medium grater. Choose a flavorful hard or semi-hard cheese that melts well.
Step 6
Heat a frying pan over medium heat and add the vegetable oil. Add the onion and cook, stirring, for a few minutes until translucent.
Step 7
Add the mushrooms to the onion and season immediately with salt and ground black pepper. Cook, stirring occasionally, until the liquid released by the mushrooms has evaporated, approximately 10–15 minutes. The mushrooms will reduce considerably in volume.
Step 8
Add the sour cream and stir. Immediately pour in a little hot water and mix well. Simmer the mushrooms in the sour cream sauce for approximately 5 minutes.
Step 9
Add the grated cheese and stir until melted. As soon as the sauce comes to a gentle boil, remove the pan from the heat.
Step 10
Serve the creamy mushrooms hot, either on their own or with potatoes, rice, pasta or another favorite side dish.
