Creamy Mushroom Soup with Sour Cream
Light, aromatic and easy to prepare! This creamy mushroom soup with sour cream is filling without feeling heavy. It is a delicious way to add variety to an everyday family menu.

Preparation
Step 1
Prepare the ingredients. Use chicken or vegetable broth. If neither is available, you can use water. Choose good-quality natural sour cream without vegetable-fat substitutes.

Pour the broth into a saucepan and bring it to a boil over medium heat.
Step 3
Rinse and peel the potatoes, then cut them into small cubes. If the potatoes are large, 2 will be sufficient. If they are medium-sized, use 3–4.
Step 4
Rinse and dry the mushrooms, then chop them finely.
Step 5
Heat the vegetable oil in a frying pan over medium heat. Add the mushrooms and cook for 5–7 minutes, stirring occasionally. You can also add chopped onion, if desired.
Step 6
Season the mushrooms with nutmeg, salt and ground black pepper. Mix well.
Step 7
Add the potatoes to the boiling broth and cook for about 15 minutes. Add the sautéed mushrooms and simmer everything together for another 5-7 minutes. The potatoes should be completely tender and break apart easily when pressed with a spoon.
Step 8
Remove the saucepan from the heat and blend the soup with an immersion blender. The texture does not have to be completely smooth – a few small pieces of mushroom or potato can remain. Return the saucepan to the heat and bring the soup back to a boil.
Step 9
Add the sour cream and mix well. As soon as the soup begins to boil, remove it from the heat so the sour cream does not curdle.
Step 10
Cover the saucepan and leave the soup to rest for about 10 minutes.
Step 11
Ladle the soup into bowls. Garnish with pan-fried mushroom slices or croutons, if desired.
