Step 1
How do you make creamy cheese soup? Prepare the ingredients. You can choose any processed cheese, preferably without additions. But if it contains herbs, that will also work. Wash the vegetables well and dry them with paper towels.

Peel the potatoes, carrot, and onion. Cut the potatoes and carrot into cubes. Leave the onion whole. Cut the celery stalk into pieces.
Step 3
Place the potatoes, carrot, celery stalk, and whole onion into a soup pot. Pour in 1 liter / about 4 cups of water. Put the pot on the heat, bring the water to a boil, and cook over medium heat until the vegetables are tender, about 30 minutes. At the end of cooking, remove the onion and discard it.
Step 4
Strain the vegetables through a sieve and return them to the pot.

Pour the vegetable broth into a small saucepan.

Blend the vegetables left in the pot with an immersion blender until smooth and even. You need to blend them for quite a while.

Add the processed cheese to the soup and blend everything again with the blender.

Pour the vegetable broth back into the pot until the soup reaches the desired consistency. I added about 1 cup of broth to get a medium-thick consistency. Blend everything again with the blender. Return the pot to the heat and warm the soup, stirring, for another 2 minutes.
Step 9
Cover the creamy soup with a lid and let it stand for about 7 minutes. Then ladle into bowls. Enjoy!
