Step 1
How do you make creamy potato soup with croutons in a blender? Prepare the ingredients. Fresh herbs are needed for serving the finished dish; I used fresh dill. I use 10% cream. Add salt and pepper to taste, and you can also add your favorite spices. To make the soup, you will need 500 ml / about 2 cups of hot water or broth. Use several slices of bread, depending on how many croutons you like in your soup. Preheat the oven to 190°C / 374°F for making the croutons.
Step 2
Cut the white bread into small cubes. Spread the sliced bread on a baking sheet in a single layer and place it in the preheated oven for about 15–20 minutes. The exact time depends on your oven.
Step 3
Keep an eye on the bread in the oven and stir it if needed. Place the finished croutons in a bowl and let them cool.
Step 4
In a thick-bottomed pot, melt the butter over medium heat. Peel the onion and garlic and chop them. You can cut them any way you like, since the soup will be blended, but do not cut them too large so you do not increase the cooking time. Add the chopped onion and garlic to the pot with the butter and fry until translucent, stirring constantly.
Step 5
Peel the potatoes and cut them into medium cubes. Add the diced potatoes to the pot with the onion and garlic and cook over medium heat for about 5–7 minutes, stirring occasionally.
Step 6
Add the bay leaf, salt, and pepper to taste to the potatoes, then pour in the hot water or broth. Place the pot with the soup over medium heat. Cook over medium heat until the potatoes are soft. Depending on the size of the potato pieces, this may take about 15–20 minutes.
Step 7
When the potatoes are cooked, remove the bay leaf from the pot and blend the potatoes with a blender. Add more salt, pepper, or other spices to taste if needed.
Step 8
Pour the cream into the blended soup, mix, and warm the soup over medium heat for about 2 minutes. If the soup seems too thick, you can increase the amount of cream or add a little more hot water.
Step 9
Serve the finished soup hot. Pour the soup into each bowl and add the prepared croutons. You can also sprinkle the soup with chopped fresh dill or parsley. Enjoy!
