Crab Stick Salad with Rice and Corn

Preparation
Step 1
Open the can of corn and drain the liquid. Rinse the cucumber well under running water to remove any dirt. I use long-grain rice - it doesn’t get mushy.
Step 2
For the salad, cook the rice and eggs. Add rice to boiling water and cook according to the package instructions - usually 15-20 minutes until soft. Drain the cooked rice in a colander and let it cool. Boil the eggs for 7-8 minutes, then cool them in cold water and peel.
Step 3
In a large salad bowl, combine the chopped eggs and canned corn.
Step 4
Cut the cucumber into small cubes and add to the bowl.
Step 5
Then add the chopped crab sticks.
Step 6
Add the cooled rice and mix in mayonnaise. Stir all ingredients well.
Step 7
The crab stick salad with rice and corn is ready! Chill slightly before serving. Enjoy!
