Cottage Cheese Casserole with Semolina in a Multicooker
This tender cottage cheese casserole is made with semolina and kefir in a multicooker. Whipped egg whites are folded in at the end, giving the finished casserole a light, airy texture.

Preparation
Step 1
Prepare the ingredients. Use good-quality cottage cheese, preferably soft rather than very grainy; any fat content will work. The original recipe uses a 200 ml cup to measure both the semolina and kefir. Adjust the amount of sugar to taste.
Step 2
Carefully separate the eggs into yolks and whites, making sure no yolk gets into the whites. It can be helpful to separate each egg individually before adding the white to the main bowl.
Step 3
Blend the cottage cheese until smooth or press it through a sieve if needed. Set the egg whites aside. Add the sugar, vanilla sugar, semolina, baking powder, cottage cheese and kefir to the yolks. If desired, add lemon zest. Whisk until smooth, then leave the mixture for 30 minutes so the semolina can swell.
Step 4
Add a pinch of salt to the egg whites and beat with an electric mixer, gradually increasing the speed, until stiff peaks form and hold their shape.
Step 5
Add the whipped egg whites to the cottage cheese mixture in several portions. Gently fold each portion in with a hand whisk or spatula using upward movements to preserve as much air as possible. The finished batter should be smooth, light and fairly fluid.
Step 6
Grease the multicooker bowl with a small piece of butter and pour in the batter. Insert the bowl, close the lid and select a suitable baking program. Cook for approximately 65 minutes, adjusting the time and setting according to your multicooker and the doneness of the casserole.
Step 7
When the cooking cycle ends, switch off the appliance and open the lid, but leave the casserole inside until completely cool, with the lid slightly closed. It may sink a little as it cools. Once cooled, carefully remove it from the bowl.
Step 8
Serve the cottage cheese casserole with sour cream, sweetened condensed milk or jam.
