Easy
More than 1 hour.
Preparation
Step 1
Prepare the ingredients. You can use cottage cheese and sour cream of any fat content. Choose large, ripe and aromatic bananas.
Step 2
Peel the bananas, break them into pieces and place in a deep bowl. Add the cottage cheese.
Step 3
Blend the cottage cheese and bananas with an immersion blender until completely smooth and creamy.
Step 4
Add the sugar, salt and flour and mix with a whisk. Add the eggs and sour cream, then beat with an electric mixer until smooth and slightly fluffy.
Step 5
Prepare a baking dish. The original recipe uses a 22 cm, or about 8½-inch, silicone pan, which does not need greasing. If using a metal, ceramic or glass dish, lightly grease it with vegetable oil. Pour in the batter and smooth the top with a spatula.
Step 6
Bake in an oven preheated to 300°F for about 1 hour. The exact time will depend on your oven and the size of the baking dish. The casserole should be fully set. Remove from the oven and let cool completely, then refrigerate overnight.
Step 7
Serve chilled. If desired, garnish with banana slices and fresh berries.
