Classic Sausage and Vermicelli Soup
Aromatic, hearty and wonderfully easy to prepare! This classic sausage soup cooks quickly because no broth needs to be made in advance. It is an inexpensive and filling family lunch that even beginners can make.

Preparation
Step 1
Prepare the ingredients. For a thicker soup, use a little more potatoes and vermicelli.
Step 2
Rinse the peeled carrot, pat it dry and cut it into thin strips.

Peel the onion and cut it into small cubes.
Step 4
Cut the sausage into medium-sized cubes. Choose good-quality sausage for the best flavor.
Step 5
Gently heat the vegetable oil in a frying pan, then add the carrot and onion. Cook over medium heat for 5–7 minutes, stirring occasionally.
Step 6
Add the sausage to the vegetables and mix. Continue cooking for a few more minutes, until the vegetables begin to soften.
Step 7
Scrub the potatoes under running water, peel and rinse them, then cut them into medium-sized cubes.
Step 8
Pour the water into a suitably sized pot and bring it to a boil. Add the potatoes, bring the water back to a boil and cook over low heat for 5–10 minutes, then season with salt.
Step 9
Add the sautéed vegetables and sausage to the pot. Increase the heat and bring the soup back to a boil.
Step 10
Cook the soup at a gentle boil so the vegetables retain their shape. After 5–7 minutes, taste the soup and check whether the potatoes are tender; some varieties may need slightly longer. Add more salt if necessary, then stir in the vermicelli.
Step 11
Add the bay leaf and cook for 2–3 minutes, depending on the type of vermicelli. Very fine vermicelli may need only about 1 minute.
Step 12
Remove the pot from the heat, cover it with a lid and leave the soup to rest for 10–15 minutes. During this time, the vermicelli will finish cooking and the flavors will develop.

Ladle the smoked sausage soup into bowls, garnish with chopped fresh herbs if desired and serve hot.
