Classic Homemade Kefir Dumplings with Sour Cherries

Step 1
How do you make classic kefir dumplings with sour cherries and sweet cherries? Prepare the ingredients. Take the kefir out of the refrigerator in advance so it can come to room temperature. With this recipe, you can make dumplings with sour cherries or dumplings with sweet cherries. For sweet cherry dumplings, you may need less sugar in the filling, so adjust it based on the tartness of the berries and your own taste.

Pour the sifted flour into a large bowl and add 1 tablespoon of sugar, 20 g.

Add the baking soda and salt to the bowl. Stir to distribute the dry ingredients evenly.

Separate the egg white from the yolk. The egg white will not be needed. Add the yolk to the bowl with the flour.
Step 5
Pour the room-temperature kefir into the bowl with the flour and yolk. Start kneading the dough, first with a spoon, then with your hands until smooth and even. The dough should be fairly soft, but still come together into a ball. If needed, add a little more kefir or flour to reach the right consistency.

Shape the kneaded dough into a ball, place it in a plastic bag, and refrigerate it for about 30 minutes.

Pour the sugar for the filling into a deep bowl, adjust the amount to taste, add the starch, and mix well.

Divide the dough into 2 parts. Sprinkle a little flour onto your work surface and place 1 half of the dough on it.

Press the dough into a thick round.

Roll the dough out with a rolling pin into a fairly thin sheet, 2-3 mm thick, about 1/16-1/8 inch.

Cut rounds out of the dough using a suitable round cutter or a glass.

Stretch each dough round slightly with your hands and place a little more than 1/2 teaspoon of the sugar and starch mixture on it, leaving the edges free.

Place pitted sour cherries or sweet cherries on top of the sugar.

Seal the edges of each dough round with filling very well. Shape dumplings from all the dough.

Place the dumplings on a cutting board dusted with flour. I got 35 pieces.

Pour water into a pot of suitable size, about 1 liter for 15-20 dumplings, about 4 1/4 cups, and bring it to a boil on the stove. Add salt to taste, place in the desired number of dumplings, and cook for about 2 minutes after the water returns to a boil. The exact cooking time depends on the size of the dumplings and the characteristics of your stove.

Transfer the cooked dumplings to a plate with a slotted spoon and serve.
