Step 1
How do you make classic cottage cheese hand pies? First prepare the dough. Get the ingredients ready. Use good-quality butter. It is the main ingredient in the shortcrust dough, so the taste and quality of the finished pastries will depend on it. Take the butter out of the refrigerator in advance so it softens at room temperature. Powdered sugar can be replaced with fine sugar. Separate one of the two eggs into yolk and white.

How do you make the dough? Combine the flour with the baking powder and sift it into a separate bowl.

In another tall container combine the butter, powdered sugar, and salt. The butter should be soft, but not melted.
Step 4
Beat everything until smooth.
Step 5
Add the whole egg and the egg white to the butter mixture. Reserve the yolk for brushing the pastries.

Beat again well.

Add the sifted flour with the baking powder. Mix first with a spoon, then knead the dough by hand. This should be done quickly, no longer than 1-2 minutes, so the butter does not warm too much from the heat of your hands. In warm dough, the butter may separate from the other ingredients, the dough will crumble when rolled out, and the pastries will turn out tough and will not rise well. If the dough is too sticky, add another spoonful of flour. But do not overdo it, so as not to make it too stiff.

The dough should be uniform, buttery, firm, but soft and pliable. Place the finished dough in the refrigerator for 1 hour. It should chill well. But do not try to speed up the process by putting the dough in the freezer. It may become too hard there and difficult to roll out. Keep in mind that you may need a little less or a little more flour.

How do you make the filling? Prepare the ingredients. Use cottage cheese with 5-9% fat for the filling. It is not worth using creamy spread-style cottage cheese, because the filling will turn out too loose. Any fat content of sour cream will work.

Blend the cottage cheese in a blender or rub it through a sieve so the filling becomes more uniform and delicate.

Combine the cottage cheese with the egg, sugar, sour cream, and flour. Mix everything well.

Cut the chilled dough into 3 equal parts.

Divide each part again into 3 pieces and quickly roll them into balls. I put the balls back into the refrigerator so the dough would not warm up, and took them out one by one while shaping the pastries.

On a floured surface, roll out each piece of dough into an oval about 0.5 cm thick, about 0.2 inch.

Place about 1.5 tablespoons of filling on one half of the rolled-out dough, not quite reaching the edges. Spread the filling evenly.

Cover the filling with the second half of the oval and press lightly so you get a half-moon-shaped pastry. Do not seal the edges; the filling should peek out a little from under the top layer of dough.

Shape the remaining pastries in the same way. Place them on a baking sheet lined with parchment paper.

In a small bowl beat the yolk with the milk until smooth.

Brush the tops of the pastries with the resulting mixture.

Bake the pastries in an oven preheated to 200°C (390°F) for 20-25 minutes, until lightly golden. The time and temperature are approximate. Rely on the characteristics of your oven.
