Step 1
How do you cook classic chicken soup with homemade noodles? Prepare the listed ingredients. If your onion and carrot are large, you can use half of each. For the chicken broth, you can use chicken legs or 3 chicken thighs. If you can get a homemade soup chicken, it is even better. The amount of noodles made is enough for a 3 liter / about 12 3/4 cup pot.
Step 2
Rinse the chicken legs under cold running water and remove any remaining feathers. If you follow healthy eating principles, remove the skin. Cover the chicken legs with cold water, bring to a boil, drain the water, and rinse the chicken. Cover again with cold water, 3 liters / about 12 3/4 cups, and place over heat. Bring to a boil, skimming off foam if needed, reduce the heat, and cook the chicken over medium heat for 30 minutes.
Step 3
How do you make egg noodles for chicken soup? Sift the flour into a deep bowl and add a pinch of salt. Make a well in the flour and crack in 1 egg. Knead the dough. Grease your hands with vegetable oil and knead the dough for 5–10 minutes. You may need slightly less or more flour. The dough will be firm and elastic. Place it in a warm spot for 15–20 minutes, or leave it on the table near the stove. The dough is ready.

Peel and wash the vegetables. Finely chop the carrot and onion. Add the chopped vegetables to the broth. Season with salt. Wash the dill, dry it, and chop finely. Add half of the chopped dill to the soup. This is optional; I do it to my taste, because I like having both cooked and fresh dill in the soup. You can add other herbs if desired. Cook the soup with the vegetables for 15 minutes.

How do you make homemade noodles for chicken soup by hand? Roll the dough out on the table into a very thin sheet. Try to roll it as thinly as possible. Leave the finished sheet on the table for about 5 minutes so it dries slightly. Then roll the sheet into a loose roll and slice it very thinly.
Step 6
Separate the finished noodles with your hands and spread them out on the table. Try not to tear the noodles so they remain long. If you think there are too many noodles, you can save some for next time: leave them on the table to dry, then store them in a container with a lid. Keep in a dry, dark place.
Step 7
Peel the potatoes and cut them into cubes. Add the chopped potatoes to the soup. Cook for another 10 minutes. Taste the soup and add more salt if needed.
Step 8
Remove the chicken legs from the soup. Add the prepared noodles to the soup and stir so they do not stick together. Cook the soup for about 3 minutes, then turn off the heat.
Step 9
Let the finished soup stand under a closed lid for a few minutes, then ladle it into bowls. Add noodle soup, chopped chicken meat, and fresh dill to each bowl. Enjoy!
