Classic Caesar Salad with Shrimp

Step 1
How to make classic Caesar salad with shrimp? First, prepare all the ingredients from the list. Tiger or king prawns work best, but regular shrimp are also great. Which greens to use? Traditionally Romaine is used; you can also use lettuce, endive, iceberg, or Napa cabbage. Rinse the tomatoes, lemon, and greens in clean water and pat dry with paper towels.
Step 2
Remove the shrimp from the freezer and thaw at room temperature. For faster thawing, you can cover the shrimp with cool water. Remove the shells and heads; you can leave the tails on or remove them - your choice.
Step 3
There are two ways to cook the shrimp: boil in boiling water until done, or marinate and pan-fry. I usually choose the second method - it gives a richer flavor. Put the shrimp into a small deep bowl, add 1 tbsp lemon juice, 2 tbsp vegetable oil or olive oil, and a pinch of salt. If you have Worcestershire sauce, add it too. Leave for 10 minutes.
Step 4
Sear the shrimp in a hot skillet for a couple of minutes on one side.

And for the same amount of time on the other side.

Trim the crusts from white bread (a loaf is fine). Cut the bread into 1/2-3/4 inch (1-2 cm) cubes. Sauté in a small amount of olive or vegetable oil. If desired, add a bit of garlic for more aroma.
Step 7
Spread the croutons on a baking sheet and dry them in a preheated oven for 5-10 minutes.
Step 8
Cover the eggs with cold water and set on the stove. Once boiling, reduce the heat slightly and cook for 1 minute. They should be soft-boiled. You only need the yolks for the dressing.
Step 9
Make the dressing. In a blender cup combine two egg yolks, mustard, 2 tbsp lemon juice, balsamic vinegar, 4 tbsp olive or vegetable oil, garlic, salt, sugar, and ground black pepper.

Blend until smooth.

Assemble the salad. Tear the greens by hand and place them as the first layer on a flat plate.

Next add the croutons and cherry tomatoes. Cut the tomatoes in halves or quarters.

Add the shrimp as the next layer.

Drizzle the dressing evenly over the salad.

Add cheese, finely grated.

If desired, sprinkle extra croutons on top and garnish with herbs. Caesar is ready - serve immediately!
