Step 1
How to make chocolate muffins? Prepare all the ingredients. Sift the flour through a sieve to aerate it. You can use chocolate chips, or simply chop a chocolate bar into pieces. Add the baking soda to the kefir right away and stir - this reaction helps the muffins rise well in the oven.
Step 2
For the batter, combine the egg with the sugar and briefly beat with a mixer. No need to whip until fluffy - just mix well.
Step 3
Pour in the kefir with baking soda and the vegetable oil. Mix.

In two additions, mix in the dry ingredients: flour and cocoa powder.
Step 5
The batter should become smooth and uniform. You can use a mixer. Stir the chocolate pieces into the finished batter.
Step 6
Pour the batter into muffin/cupcake molds (I got 11) and bake in an oven preheated to 350°F (180°C) for 30 minutes. Adjust to your oven.
Step 7
Check doneness with a wooden skewer: pierce a muffin and pull it out. If the skewer is dry, the muffins are baked through. Remove from the oven.
Step 8
Cool the muffins by laying them on their sides. This prevents the bottoms from getting damp from trapped steam.
Step 9
For the glaze, take chocolate, milk, and butter.
Step 10
Heat the milk together with the butter until hot. Add the chocolate broken into pieces and, stirring, let it melt.

You can leave the muffins in the molds or remove them. Dip the tops into the chocolate. You can do this twice, letting the first layer set a little.

Decorate the finished muffins with fresh berries or fruit.

Put the muffins in the refrigerator for a few minutes so the chocolate sets.
