Chocolate Cocoa Jelly
A wonderfully delicate dessert made from simple ingredients! This cocoa jelly has a rich chocolate flavor and is easy enough for beginners. Decorate it with fresh berries, nuts or grated chocolate, or serve it with ice cream.

Preparation
Step 1
Prepare the ingredients. Milk of any fat percentage will work, but choose good-quality natural milk. Use unsweetened natural cocoa powder rather than a sweetened instant cocoa drink. Adjust the amount of sugar to taste. Any type of gelatin will work; follow the blooming instructions on its package.
Step 2
Place the gelatin in a small bowl and pour approximately 3 tablespoons of cold water over it. Stir and leave it to bloom. Quick-setting gelatin may need about 5 minutes, while other varieties can require up to 20 minutes.
Step 3
Pour the milk into a saucepan and add a couple of tablespoons of the sugar. Place over low heat. In a separate bowl, mix the cocoa powder with the remaining sugar. Add vanilla sugar, if desired.
Step 4
When the milk comes to a boil, gradually add the cocoa and sugar mixture. Whisk until smooth and cook for 1 minute, then remove the saucepan from the heat.
Step 5
Immediately add the bloomed gelatin to the hot cocoa mixture. Whisk thoroughly until the gelatin has completely dissolved.
Step 6
Pour the hot mixture through a fine sieve into small serving molds or glasses so the jelly is completely smooth. Leave it to cool slightly at room temperature, then refrigerate until completely set.
Step 7
Serve the chocolate cocoa jelly garnished with berries, cookies, nuts or grated chocolate.
