Step 1
How to make chickpeas with meat and vegetables? It’s very simple. Prepare the necessary ingredients. Rinse the chickpeas, cover with cold water and leave overnight. Rinse the pork and pat it dry with a paper towel. This helps the meat fry properly; otherwise it will stew. Instead of pork, you can use beef, lamb, veal or chicken.
Step 2
Cut the pork into cubes. In a preheated pan pour in ½ tablespoon of vegetable oil and fry the meat until golden.

In the meantime, peel and finely chop the onion. In a separate pan melt ½ tablespoon of vegetable oil together with some butter. Fry the onion until translucent. Add finely chopped garlic. If you are using thick-walled cookware, you can add the onion and garlic straight to the already fried meat. Chickpeas with meat can also be cooked in a tagine - a popular heat-resistant ceramic pot in Middle Eastern countries.
Step 4
Add the fried onion, garlic and spices to the meat. Stir and stew for 2 minutes. Add one cup of hot water, bring to a boil, cover with a lid and simmer over low heat for about 1 hour. In a tagine you must not add cold water - because of the temperature difference the pot may crack.
Step 5
Peel the tomatoes and cut them into small pieces. Add the chickpeas, tomatoes, tomato paste and one cup of hot water to the pot with the meat and onion, and stir. Bring to a boil, cover with a lid and simmer over low heat for another hour. After this time, taste the chickpeas; if they are still firm, add a little more water and stew for about 30 more minutes.
