Instead of chicken fillet, you can use meat cut from the legs or thighs. You can also use turkey, pork, or beef, but note that cooking time will increase. The mix of vegetables can vary.

Rinse the chicken fillet and pat it dry with paper towels. Make sure no excess moisture remains.

Peel the potatoes, onions, carrots, and garlic. Cut the bell peppers in half and remove the seeds. For a more colorful dish, use peppers of different colors.

Rinse and dry all the vegetables.
Step 5
Cut the potatoes into large wedges and cover them with cold water so they don’t darken. Ten minutes before cooking, drain and let them dry - they’ll be ready for frying.

Slice the onion into half rings, cut the pepper into strips, carrots into rounds, and garlic into halves or quarters. The size of the cuts can vary, but larger pieces usually give better flavor.

Cut the chicken into medium-sized pieces.

Place a skillet (preferably cast-iron or a sadj wok) over the fire. You can cook on a grill, in a tandoor, or over an open flame. Pour in odorless vegetable oil and start frying the potatoes.

Salt to taste and cook until golden and soft. Remove the potatoes from the pan using a slotted spoon.

In the same oil, add all the vegetables.

Stirring constantly over high heat, cook for about 10 minutes, until the vegetables soften. Remove them with a slotted spoon and set aside.

Add the chicken to the pan. Salt and fry until fully cooked, stirring occasionally to prevent burning.

Return the fried vegetables to the skillet. Add your favorite spices and seasonings, stir, and cook for another minute.
