Chicken with Quince and Prunes

Preparation
Step 1
Prepare the ingredients. You can use any chicken pieces, such as drumsticks, thighs or chicken breast, or use a whole chicken. You will also need a large quince, prunes, fresh rosemary, soy sauce and chicken seasoning. You can adjust the spices, omit the prunes or add other ingredients, such as apples, onions or bell peppers, according to your taste.
Step 2
Rinse the chicken and pat it dry. If using a whole chicken, cut it into serving pieces. Arrange the chicken in a baking dish. You can line the bottom and sides of the dish with foil to prevent the chicken juices from burning onto the surface.
Step 3
Pour the soy sauce over the chicken and sprinkle it with the chicken seasoning.
Step 4
Mix everything thoroughly. Place the chicken in the refrigerator and leave it to marinate for 2–3 hours.
Step 5
Cut the quince into large pieces and remove the seeds.
Step 6
Arrange the quince pieces around the chicken. Fill the spaces between the pieces of meat with the prunes. Tuck the rosemary sprigs between the chicken and quince.
Step 7
Bake the chicken with the quince and prunes in an oven preheated to 350°F for about 1 hour. Occasionally baste the chicken with the juices from the bottom of the baking dish. You can cover the dish with foil for the first 30 minutes to prevent the quince from burning. Then remove the foil and continue baking until the chicken develops a golden-brown crust. Enjoy!
