Step 1
How do you cook soup with corn grits and chicken? Prepare the necessary ingredients. In addition to the chicken leg quarter, I also added a wing and a neck for extra richness.

Rinse the corn grits thoroughly until the water runs clear. It is necessary to wash out the starch, otherwise the soup may have a slight bitterness. And to keep the broth clear, I recommend boiling the grits separately for about 3-4 minutes.

Peel the potatoes and cut them into medium cubes.

Peel the carrot and grate it on a coarse grater.
Step 5
Wash the chicken leg quarter and place it in a pot. Add a whole peeled onion and a stalk of celery to the pot as well.

Pour water into the pot and bring it to a boil over medium heat. Cook the broth for about 35 minutes, skimming off the foam. At the end of cooking, remove the onion and celery and discard them, as they will no longer be needed.

Remove the chicken leg quarter from the broth and separate the meat from the bones.

Strain the broth through a fine sieve, cheesecloth, or a clean cotton cloth and return it to the heat.

Add the grated carrot and the corn grits to the broth. Bring the soup to a boil and cook for about 15 minutes, stirring from time to time.

Add the potatoes and frozen peas to the soup. Cook for about 20 more minutes, until the potatoes are done.

Return the chicken meat to the pot. Also add the bay leaf. Season the soup with salt and pepper to taste and stir. Cook the soup for about 5 more minutes after it comes to a boil.

Remove the finished soup from the heat, cover it with a lid, and let it stand for 10 minutes. Then the soup can be ladled into bowls. Enjoy your meal!
