Preparation
Step 1
How do you make chicken salad with pickled cucumbers? Prepare all the necessary ingredients. Use larger eggs, ideally home-raised or size L. Pickled cucumbers can easily be replaced with salt-brined cucumbers. The cheese can be any kind, but it is best to use a firm or semi-firm cheese so that it can be grated.
Step 2
Wash the cucumbers, cut off the ends, and dice them finely. Grate the cheese on a medium grater.
Step 3
Boil the chicken, if it is raw, for about 20 minutes after the water comes to a boil in salted water. Then let it cool and cut it into small cubes.
Step 4
Boil the eggs hard, usually for 8-10 minutes after the water comes to a boil. Cool them with ice-cold water; this will help you peel them more easily later. Cut the eggs into small cubes.
Step 5
Mix all the ingredients together. Salt the salad lightly. Keep in mind when adding salt that mayonnaise is also fairly salty.
Step 6
Add the mayonnaise. I recommend not using commercially produced mayonnaise, as it is not very wholesome. It is best to dress the salad with homemade mayonnaise. If you do not use mayonnaise at all, you can easily use sour cream of any fat content instead. Those who prefer lighter dishes can dress this salad with plain natural yogurt.
Step 7
The salad is tasty and complete on its own. It is suitable both for a festive table and for an everyday meal. Enjoy your meal!
