Preparation
Step 1
Prepare all the required ingredients. A firm block of feta is particularly convenient, as it can be cut into strips approximately the same width as the chicken pieces. Choose a large tomato and sliced bacon. For 6 servings, approximately 12 strips of bacon will be needed.
Step 2
Rinse the chicken fillets thoroughly and pat them dry with paper towels. Cut each fillet horizontally into thin pieces. One fillet should yield approximately 2 pieces. Pound the chicken lightly. Rub both sides with a cut garlic clove, trimming the clove occasionally to expose a fresh surface. Season both sides with salt and dried chicken seasoning.
Step 3
Place 1 strip of feta and 1 strip of tomato on each piece of chicken. Roll the chicken tightly around the filling. Wrap each roll with 2 strips of bacon and secure with 2 toothpicks.
Step 4
Arrange the rolls in a baking dish. There is no need to grease it, as the chicken and bacon will release enough juices while cooking. Place any remaining tomato pieces between the rolls. Bake in an oven preheated to 350°F for 30–40 minutes using conventional top and bottom heat. For a more golden finish, cook with convection for another 5–10 minutes.
Step 5
Remove the baked chicken rolls from the oven. Sprinkle with freshly chopped dill and parsley for additional aroma, then serve hot.
