Chicken Roll with Prunes Baked in the Oven

Step 1
How do you make chicken roll with prunes in the oven? Prepare the listed ingredients. It is best to use fresh chicken breast fillet. If the meat is frozen, thaw it completely in the refrigerator first. Use pitted prunes. Instead of mayonnaise, you can use sour cream or natural yogurt. The recipe uses ground black pepper, but you can also choose other favorite dry spices. Grate the cheese on a coarse grater; any hard or semi-hard cheese will work.

Rinse the prunes under cold running water and pour hot water over them for 15-30 minutes, depending on how much time you have.

Preheat the oven to 190°C (375°F). Rinse the chicken fillet under cold running water and pat it dry with a towel, paper or cloth. Remove any sinews and membranes. Place the meat on a board and cover it with plastic wrap. Pound the chicken on both sides with a meat mallet. Do not pound it too thinly, otherwise the filling may fall out. Overlap the pounded fillets slightly and, through the wrap, pound them together so they form one single layer.

Place the pounded chicken layer on foil and season it with salt and ground black pepper. Distribute the salt and spices evenly over the whole surface of the meat.

Spread mayonnaise evenly over the entire surface of the meat.

Sprinkle the fillet evenly with 2/3 of the grated cheese. Set the remaining 1/3 aside for now.

Drain the softened prunes and spread them evenly over the whole surface of the fillet.

Carefully roll the meat into a roll so the filling does not fall out. Roll it up using the foil, first from one side and then from the other. Fold in all the edges of the foil so the filling and juices do not leak out.

Place the prepared foil-wrapped roll into an oven-safe dish. Put the dish with the roll into the preheated oven for 30 minutes.
Step 10
After 30 minutes, remove the dish with the roll, carefully cut open the foil, and unfold it. Sprinkle the surface of the roll with the remaining cheese. Return the dish to the oven for 5-10 minutes, until the cheese melts. You can leave it a little longer if you want a golden crust to form.
Step 11
Remove the finished roll from the oven, carefully take off the foil, and place it on a serving platter or board. Cut the roll into portion pieces. If you serve it immediately after cooking, it will be juicier and more aromatic than after it has cooled slightly.
