Chicken Ramen Soup

Step 1
How do you cook chicken ramen soup at home? Prepare all the ingredients. If the chicken is frozen, thaw it ahead of time. I used two small chicken legs (about one leg per serving). Cook the eggs hard-boiled and peel them.
Step 2
Rinse the chicken, remove any remaining feathers if needed. Put the chicken in a pot, cover with cold water, and set on the stove. Bring to a boil over high heat.
Step 3
Meanwhile, peel the carrot, onion, and garlic. Rinse the vegetables.
Step 4
Carefully skim off any foam from the pot. Add the carrot and onion to the broth, reduce the heat to medium, and simmer the chicken until cooked through with the lid slightly ajar. This took about 30-35 minutes for me.
Step 5
Remove the cooked chicken from the pot and strain the broth. When the chicken cools slightly, pull it into small pieces.
Step 6
Pour soy sauce into the chicken broth, add minced garlic, allspice, ground ginger, and chili pepper. Stir and taste for salt; add more if needed. Return the pot to the stove and keep it warming on the lowest heat.
Step 7
Cook the noodles in a separate pot.

Take a deep bowl. Place the cooked noodles closer to one side.

Arrange the chicken pieces on the other side.
Step 10
Cut the egg in half and add it to the bowl. At this stage you can add fresh soybean sprouts. I used ready-made marinated vegetables for Asian soups, but you can add fresh ones or marinate them ahead of time.

Pour in the hot broth.

Sprinkle with sesame seeds and finely sliced scallions.
