Step 1
How do you make a chicken marinade with soy sauce? Prepare all the necessary ingredients. Use classic soy sauce without additives so that its taste and aroma do not overpower the spice blend chosen for the marinade. Use liquid honey, as it will combine better and faster with all the other ingredients. You can replace the white wine vinegar with the juice of half a lemon or 1 tablespoon of apple cider vinegar or regular 9% table vinegar.
Step 2
If the honey is crystallized or almost crystallized, melt it first in the oven or in the microwave. Then cool it at room temperature. If you melt honey in the microwave, remember that you must not put dishes with gilded rims or patterns, or metal dishes, into it. Such dishes will spark in the microwave. It is best to use glass, ceramic, or porcelain.
Step 3
In a bowl, combine the soy sauce, liquid honey, white wine vinegar, curry, dried garlic, ground ginger, and ground pepper. You can replace the dried garlic and ground ginger with fresh ones. You will need 2 garlic cloves and a 2 cm piece of ginger root, about 3/4 inch. Peel them and grate them on a fine grater. The garlic can also be put through a press.
Step 4
Sift the flour into the marinade through a sieve. The flour should definitely be sifted. This way it will combine better with the sauce and small lumps will not appear. After adding the flour, the consistency of the marinade hardly changed. It remains just as fluid, without any noticeable thickness. However, if you pour the marinade into a baking dish with the chicken, under high heat and as excess moisture evaporates, the marinade will gradually thicken. As a result, together with the chicken you will also get a delicious thick sauce.
Step 5
Mix everything very well. If lumps of flour appear in the marinade, strain the whole mixture through a sieve.
Step 6
The marinade is ready. You can pour it over the chicken and leave it to marinate for a couple of hours or overnight. Enjoy your meal!
