Chicken in Soy Sauce with Honey
With a bright crust, unusually tasty and very appetizing! Chicken in soy sauce with honey has long been considered a classic. A simple marinade gives the bird juiciness, a unique taste and aroma. And the butter and vegetable oil make the meat soft and tender! Great both for holidays and for everyday meals.

Step 1
What size chicken should you use? Take a chicken of whatever weight you need. The amount of marinade here is for a bird weighing about 2 kg (around 4½ lb) or a bit more. If your chicken is under 2 kg, you can reduce the amount of soy sauce, honey, vegetable oil and butter by about one third.
Step 2
Rinse the chicken and pat it dry very well with paper towels inside and out. Rub the bird with salt and pepper, both inside and outside. Leave the chicken at room temperature while you prepare the marinade.
Step 3
Now prepare the ingredients for the marinade. You can add to them or replace some, keeping the three main ingredients: soy sauce, honey and ginger. The listed spices can be replaced with a ready-made spice mix for chicken, but read the ingredients on the package. Such mixes often already contain salt and pepper, so be careful not to oversalt the dish together with the soy sauce. Use any vegetable oil you like; here olive oil is used.
Step 4
In a small bowl, mix together the vegetable oil, melted or very soft butter, honey, soy sauce, ginger, garlic and curry. Add freshly ground black pepper. Dried garlic and ginger can be replaced with 1 fresh clove of garlic and about 2 cm of fresh ginger root, both grated on a fine grater.
Step 5
Mix everything very well. The mixture will not be completely smooth - small pieces of butter will float on the surface, but during the first minutes of baking in the oven they will melt and the marinade will become homogeneous.
Step 6
Rub the chicken with the marinade on the outside and inside. Leave the bird to marinate in the refrigerator for 1-2 hours.
Step 7
If you have the time, it is even better to leave it overnight. The longer the meat marinates, the more tender, tasty, juicy and aromatic it will be.
Step 8
Gradually the marinade thickens, forming a delicious, crispy honey crust on the surface of the bird. Enjoy!
