Preparation
Step 1
How do you grill chicken heart kebabs on a barbecue grill? Prepare all the necessary ingredients. Use chilled hearts, as they contain more beneficial substances than frozen ones. The vegetable oil can be any kind - sunflower, corn, olive, or canola - but it should be refined so the hearts do not burn during cooking.
Step 2
Wash the chicken hearts, then dry them well. If you like, you can replace chicken hearts with turkey hearts or the hearts of another poultry bird.
Step 3
Pay special attention to choosing the soy sauce. There are many cheap substitutes for natural soy sauce now, but do not chase the lowest price. Choose only naturally fermented soy sauce, with a minimal ingredient list and no unnecessary additives. Since we will use it to marinate the hearts, it is especially good if you choose a soy sauce intended specifically for marinades. Pour the soy sauce over the hearts.
Step 4
Add the vegetable oil. I really like using sesame oil in marinades.
Step 5
Add the minced garlic. I pressed the clove through a garlic press, but you can grate it on a fine grater or chop it with a knife. Fresh garlic can be replaced with garlic powder. At this stage, you can also add your favorite herbs or seasonings to the hearts: Georgian spice blend, ground pepper, herbes de Provence, thyme, or rosemary - choose to your taste. Leave the hearts to marinate for at least 30 minutes.
Step 6
Since chicken hearts are quite small, we will cook them on wooden skewers. To prevent them from burning on the grill, soak the skewers in water for at least 30 minutes. Ideally, let them stay in the water for about 2 hours.
Step 7
Thread the marinated hearts onto the wooden skewers.
Step 8
Light the firewood in advance. Birch firewood is recommended for cooking over coals. Wait until it burns down and forms coals. You can also use ready-made charcoal - just heat it until very hot.
Step 9
Wooden skewers are quite short, so they cannot be placed on the grill in the usual way. Therefore, put a grill grate on the barbecue and place the skewers with the hearts on top of it. Cook the kebabs, turning them quite often so the hearts do not burn and cook evenly. The total cooking time is about 15-20 minutes.
Step 10
Serve the heart kebabs with fresh vegetables and herbs. Enjoy your meal!
